This creamy white chili is the perfect comfort food for a chilly winter night! It’s packed with flavor and hearty ingredients, but it’s also lightened up with a few simple swaps. I love chili all year round, but there’s something about a big pot of chili simmering away on the stove in the middle of winter that just feels extra cozy. This particular recipe is one of my favorites because it has all the comforting flavors of a traditional chili, but it’s lightened up with a few simple swaps. Plus, it can easily be made in the Instant Pot or on the stovetop!

What is White Chili?

White chili is a type of chili that is traditionally made with white beans, chicken, and green chilies. It is typically a bit milder than traditional red chili, although the exact spice level can vary depending on the recipe. This dish is perfect for chilly winter nights, and can be easily made in a crockpot for added convenience.


Ingredients

It's packed with flavors from the roasted poblano peppers, white beans, and corn, and it has just the right amount of spice from the jalapeño peppers. Serve it with a dollop of sour cream and a side of cornbread for a complete meal.

Ingredients:

-2 tablespoons olive oil
-1 large onion, diced
-3 cloves garlic, minced
-2 roasted poblano peppers, diced
-1 jalapeño pepper, seeded and diced
-2 cans white beans, drained and rinsed
-1 cup corn kernels
-4 cups chicken broth
-1 teaspoon cumin
-1 teaspoon oregano
-Salt and pepper to taste
-Sour cream for serving (optional)


Directions

Assuming you have all the ingredients prepped, this dish comes together quickly. First, heat the oil in a large pot over medium heat. Add the onions and cook until softened, stirring occasionally. Then, add the garlic and cook for an additional minute.

Next, add the chicken and cook until browned. Stir in the spices and cook for a minute more. Finally, add the beans, corn, and chicken broth. Bring to a simmer and cook for 10 minutes.


If desired, garnish with sour cream, cheese, and/or green onions before serving. Enjoy!
